Turkey Bacon Wrapped Chicken Poppers




Ingredients: 


  • 3 large chicken breasts (boneless, skinless)
  • 3 jalapeno peppers (diced)
  • 6 slices of bacon
  • 60g cheddar cheese
  • 8 tbsp cream cheese (at room temperature)
  • sea salt and pepper to taste


Instructions: 

Preheat the oven to 400. Cut into the thick part of the breasts and create a “pocket”. Salt and pepper both sides, and set it aside until you need it. Mix the cream cheese, jalapeno peppers, grated cheese together. Sort out which way the breasts will fold over best. Divide the mixture between the three breasts. Roll the breasts up and try to overlap the edges of the chicken a little. Starting at one end wrap a piece of bacon around the chicken on a bit of a diagonal, overlap the end slightly with the second piece and continue to wrap. Try to make sure both ends have some bacon covering it to seal them. Put the breasts on a baking sheet on top of a wire rack, and bake for 30-45 min depending on how crispy you like the bacon.
