Sausage and Egg Casserole



















Ingredients: 

  • 1 medium yellow onion
  • 1 package Aidells Chicken Apple Sausage Minis
  • 6 oz sliced baby bella mushrooms, chopped
  • 1 tbsp organic butter
  • 6 large eggs
  • 1/2 cup shredded Parmesan cheese
  • 1 cup shredded sharp cheddar cheese
  • 4 oz cream cheese
  • red pepper flakes (optional)

Instructions: 

Preheat the oven to 350 degrees and spray 8" x 8" baking dish with nonstick spray. Slice onion and sausage, add butter to skillet and melt over medium high heat. Saute onions until translucent, add mushrooms until fully cooked, add sausage until browned. Crack and beat 6 eggs, add red pepper flakes (optional). Whisk Parmesan and 1/2 cup cheddar cheese into eggs. Add cream cheese to skillet, melt and combine thoroughly. Pour sausage mixture into the bottom of the baking dish. Cover with eggs and sprinkle with the remaining cheddar cheese. Bake 20-30 minutes until golden brown and the eggs are set. Finish with sour cream and onions (optional).

Macros: Makes 12 servings. Per serving: 288 calories, 21 g protein, 5 g carbs, 1 g fiber, 2 g sugar, 23 g fat
