Pesto Stuffed Chicken Thighs



Ingredients:
  • 4 boneless chicken thighs with skin
  • 8 tsp pesto sauce
  • ½ tsp salt
  • ¼ tsp black pepper
  • 1 tbsp olive oil


Instructions:

Preheat the oven to 400 degrees. Trim the thighs of extra skin and fat and place in an ovenproof dish. Stuff about 1 tsp pesto under the skin of each chicken thigh then rub the rest of the pesto over the tops of each thigh. Season with salt and pepper. Drizzle with olive oil and bake for about 40 minutes. Makes 4 servings.

Macros per serving (1 thigh): 215 calories, 13g fat, 1 carbs, 23g protein.
