Keto Slow Cooker Orange Chicken

Ingredients:

Orange Chicken:
  • 2 lbs boneless and skinless chicken thighs
  • 1/3 cup coconut aminos
  • 1/3 cup honey
  • 2 tbsp orange juice
  • 2 tbsp tomato paste
  • 1 tbsp sesame oil
  • 2 tsp minced garlic
  • 1/2 tsp ground ginger
  • 3/4 tsp sea salt
  • 1/2 tsp red pepper flakes
  • 1/4 tsp cracked black pepper
  • sesame seeds (for garnish)

Bonus!

Cauliflower Rice:
  • 1 head cauliflower trimmed and cut into florets
  • 2 tsp extra virgin olive oil
  • 1 tsp sesame oil
  • 1/2 cup finely diced yellow onion
  • 1 clove garlic finely minced
  • 1/2 cup water


Instructions:

Orange Chicken: Place chicken in a single layer in the bottom of a slow cooker. Place the remaining ingredients, except sesame seeds, in a bowl. Whisk together and pour over the chicken. Turn the chicken once to ensure even coating. Cook the chicken on low heat for 4 hours. Remove the chicken from the sauce and cut into cubes. Transfer the sauce from the slow cooker to a small pan. Simmer the sauce over medium heat for 20 minutes, until it has reduced by about half and is thick and shiny. Toss the chicken in the sauce and serve over cauliflower rice with a sprinkle of sesame seeds. Cauliflower Rice: Place the cauliflower florets into a food processor and grate into "rice grains". Heat the oil in a large skillet or wok over medium high heat. Add the onion and garlic and saute for 5 minutes. Add the riced cauliflower and continue cooking for 5 to 7 minutes, until the onions are translucent. Add the water, then cover and steam for 5 minutes, until the cauliflower is cooked and the water has been absorbed.

Macros: per 1 cup serving of chicken only: 516 calories, 25g fat, 49g protein, 9g carbs, 0g fiber, 2g sugar.
