Keto Frittata

Ingredients:
  • 1 tbsp coconut oil
  • 4 eggs
  • 300g fatty ground beef
  • ½ green pepper
  • ½ red pepper
  • ¼ cup of kale
  • ½ cup mushrooms
  • 200g goat cheese (choose a low-carb cheese)
  • 1 tbsp curry powder
  • 1 tbsp paprika
  • 1 tbsp garlic powder


Instructions:

Cut the kale, mushrooms, green pepper and red pepper into small cubes. Heat the coconut oil in a pan and sauté the vegetables until done. Add the ground beef and stir until browned. Beat the eggs with the spices. Make sure the ingredients are spread evenly over the pan and gently pour eggs evenly in the pan.  Sprinkle the goat cheese over the top. To finish just cover the skillet until the eggs are cooked and the cheese is bubbling (3-5 minutes).

Macros: 490 calories, 25g protein, 8g carbohydrates, 3g fiber, 40g fat
