Keto Crispy Fried Chicken

Ingredients: 


  • 12 oz chicken breast sliced in half
  • 1/2 cup crushed pork rinds
  • 1/3 cup shredded Parmesan cheese
  • 1 large egg
  • 1 tsp pepper
  • 1/5 tbsp olive oil
  • 1 tbsp coconut oil


Instructions: 

Crush pork rinds in a zip lock bag. In a bowl, put the pork rinds,  cheese and pepper and mix well. In a separate bowl, crack an egg and whisk well. Dip the chicken into the egg mixture, then dip it into the pork rind crumb mixture. Dip the chicken in the egg mixture again, and again into the pork rinds. In a pan, put your olive oil and coconut oil on medium high heat. Once the oil is hot, place the chicken inside and let cook for 60 seconds or until the outside crust gets crispy and browned. Flip the chicken over and repeat on the other side. Flip a third time if necessary and turn the heat down to let the chicken cook for about 6-7 more minutes. Let rest 10 minutes before serving.

Macros: per serving: 560 calories, 46 g fat, 35 g protein, 1 g carbs, 0 g fiber, 0 g sugar.
