Ingredients:
- 16 oz 80/20 ground Kobe beef
- 1 tbsp Dijon mustard
- 2 cloves crushed garlic
- 1 tsp salt
- 2 tbsp coconut oil
- 1 package frozen spinach (about 10 oz)
- 10 large eggs
- 2 tbsp chopped parsley
- freshly ground black pepper to taste
- 8 oz soft goat cheese (crumbled)
- 4 slices of turkey bacon (chopped)
Instructions:
Preheat the oven to 400 degrees. In a bowl, combine the beef, mustard, garlic and half of the salt. Mix well and form the mixture into small meatballs and set aside. Wash and dry the spinach, grease a large pan with coconut oil and add the spinach. Cook until wilted and remove from the heat. Crack the eggs into a large bowl and whisk. Add the herbs and season with salt and pepper. Pour the eggs into a large casserole dish. Add the spinach, crumbled goat cheese, and raw meatballs to the eggs. Finish with the chopped bacon. Bake for 40-45 minutes and serve. Makes 8 servings.
