Keto African Chicken Stew



Ingredients:
  • ½ cup coconut oil
  • 3 ½ lbs chicken breasts cut in pieces
  • 2 cups low sugar tomato puree
  • 1 large yellow onion (chopped)
  • 1 tsp minced garlic
  • 1 ½ tsp dried thyme
  • 1 tbsp paprika
  • ½ tsp curry powder
  • 2 bay leaves
  • 2 green onions (chopped)
  • 3 tbsp parsley
  • salt and pepper to taste
  • 1 cup chicken stock.


Instructions:


Season the chicken with salt and pepper, set aside. In a large pot, heat oil over medium heat and add chicken and saute, stirring frequently, until the chicken is browned. Add the tomato puree, onions and garlic and let simmer until tender, about 20 minutes, stirring frequently. Next add all the other spices and chicken stock, continue to cook until the liquid reduces slightly, another 20-30 minutes. Remove from heat and serve.
