Ingredients:
- 3 strips duck bacon
- ½ avocado
- 2 large eggs
- 1 tbsp heavy whipping cream
- 1 tsp cayenne pepper
- salt and pepper to taste
Instructions:
Lightly grease a iron skillet or frying pan with a non-stick spray and cook the duck bacon until crispy. While the duck bacon is cooking, slice the avocado in half, sprinkle with salt, pepper and cayenne pepper and set aside. In a small bowl, crack the eggs and add the cream. Beat eggs until well combined. Remove the duck bacon from the skillet but keep the fat in the pan. Add the egg mixture and reduce the heat to medium-low. Slowly cook the eggs, gently folding over until they are cooked through. Sprinkle cayenne, salt and pepper on top of the eggs, remove from the skillet and plate along with the avocado and duck bacon as pictured above. Makes 1 serving.
Macros per serving: 458 calories, 35g fat, 24g protein, 12g carbs (8g net carbs), 4g fiber, 3g sugar.
