Bacon and Broccoli Egg Cup



Ingredients:

  • 12 slices sugar free bacon
  • 12 large eggs
  • ½ cup heavy cream
  • ½ tsp salt
  • ¼ tsp black pepper
  • ½ cup shredded cheddar cheese
  • 2 cups chopped and steamed broccoli


Instructions:

Preheat the oven to 350 degrees. Grease a 12-cup muffin tin with cooking spray or butter. Cook the bacon in a skillet over medium heat until nearly crisp. When the bacon is fully cooked, line each one of the muffin tin wells with 1 piece of bacon each. Whisk the eggs, heavy cream, salt and pepper together in a large mixing bowl. Add cheese and chopped broccoli and stir until combined. Pour an equal amount of mixture into each muffin well and bake for 20-minutes or until lightly browned on top and firm throughout. Makes 12 servings.

Macros per serving: 137 calories, 9.2g fat, 11.6g protein, 1.9g carbs, .4g fiber.
